Ingredients
Dressing
- 1 tsp dijon mustard
- 1 tsp balsamic vinegar
- 1 tbsp olive oil
Chicken and Salad
- 4 oz skinless raw chicken breast to make 3 oz. cooked
- 1 cup romaine lettuce and spinach
- 1/2 cup chopped carrots
- 1/2 cup chopped tomatoes
- 1 slice whole grain bread or toast
- cooking spray or olive oil

Instructions
- Spray pan with cooking spray or lightly coat pan with olive oil.
- While skillet becomes warm cut raw chicken into strips and place raw chicken in pan.
- Cook over medium heat.
- While chicken is cooking prepare homemade balsamic dressing by mixing mustard, oil and vinegar together. Chop the vegetables and place in a medium sized bowl.
- When the chicken is done; white throughout, add to vegetables and toss with ½ or 2 tbsp. of the dressing.
- For more flavor not reflected in the nutrition information sprinkle salt and pepper or garlic salt on chicken when cooking (*any recommended protein may replace chicken)
